Vietnamese Cooking course

I can't think of many better ways of Spending a rainy Saturday afternoon than preparing, cooking and eating a Vietnamese feast. This was an afternoon to remember!

For Anthony's birthday, I decided to treat him to a cooking course and, after much internet research, I decided to take him to Leluu's Vietnamese cooking course. It was a fantastic, interesting afternoon where we watch Uyen and her mum cook lots of dishes from scratch and then sat round and ate a feast. We also went to the local Vietnamese supermarket where we were able to stock up on ingredients to take home. 



The course followed a typical day's menu in a Vietnamese home, a lot of cooking for one day! There were so many fantastic dishes but here are our favourites.



With a huge pot of stock bubbling away on the stove, we started off with tea and then straight away began preparing vegetables and chicken for our summer rolls. I was amazed how easy they were to assemble and how tasty they were with a hoisin and garlic prawns which really brought out the flavours. 






Next up was the chicken salad. A tangy medley of chicken, carrot, banana blossom and fresh herbs.

Delicious, fresh with a really healthy feel and a perfect summer lunch!






 I really enjoyed making these meaty treats called Bo La Lot. We wrapped bettle leaves around pieces of marinated steak and then baked them in the oven. They were so juicy and tasty, a great starter or snack for a dinner party.
      















The Pho soup was delicious! It was so full of flavour and I definitely want to try making this at home. I think that it would be the perfect cure for a cold (or a hangover!)






My favourite dish of the day was the seabass that I had helped prepare earlier. Stuffed with ginger and onion, the fish was roasted in the over and then covered in the most delicious warm sauce made with soy and garlic. 



The banana fritters and frozen yoghurt dessert was so refreshing and a lovely end to our feast. The Vietnamese yoghurt was so easy to make and I am sure that it will become a dinner party staple! Unfortunately it was so delicious that it did not even make the photo shoot - it was instantly devoured by all!


  


After a lovely afternoon, all the leftovers were packed up and we took them home. The pho stock is waiting in the freezer, ready to be a star in our next Vietnamese feast.
