Brown Bread Ice Cream

Brown bread ice cream was one of my favourite desserts as a child. I have vivid memories of mixing the ingredients, putting them into blue ice cream containers and stirring every hours to make sure that the ice cream didn't become too crystallised. We recently bought an ice cream maker so it was an obvious choice for our first experiment. 





Ingredients:
450g greek yoghurt
4 drops of vanilla essence
100g wholemeal breadcrumbs
50g muscovado sugar


1. Toast the breadcrumbs.
2. When cool, mix with the other ingredients. 
3. Pour into an ice cream maker.


After 20 minutes the ice cream was ready. It is such an easy recipe and the flavour took me back to my childhood in an instant, slightly tart with a chewy texture from the breadcrumbs! I updated the dish, taking inspiration from Heston Blumenthal, and served it with a salted caramel sauce. 


I think this will become a dinner party favourite! I wonder if I can turn carrot cake into an ice cream...
